Organic Roast Turkey Recipe
Ingredients:
- 1 organic turkey (12–14 lbs)
- 4 tbsp organic unsalted butter, softened
- 2 tbsp olive oil
- 2 tbsp fresh organic thyme, chopped
- 2 tbsp fresh organic rosemary, chopped
- 2 tbsp fresh organic sage, chopped
- 4 cloves organic garlic, minced
- 1 organic lemon, halved
- 1 organic onion, quartered
- 2 cups organic chicken or vegetable broth
- Sea salt and freshly cracked black pepper, to taste
Directions:
- Prepare the Turkey: Preheat your oven to 325°F. Remove the giblets (save them for gravy if desired!) and pat the turkey dry with paper towels.
- Make the Herb Butter: In a small bowl, mix the softened butter with olive oil, garlic, thyme, rosemary, sage, salt, and pepper.
- Season the Turkey: Gently loosen the turkey skin around the breast and rub the herb butter under the skin. Rub any remaining butter over the outside of the bird.
- Stuff the Bird: Place the lemon halves and onion quarters into the turkey cavity.
- Roast: Set the turkey on a roasting rack in a large pan. Pour the broth into the bottom of the pan to keep the bird moist while roasting. Cover loosely with foil. Roast for 3–3.5 hours, basting every 30 minutes. Remove the foil for the final 30 minutes to allow the skin to crisp. The turkey is done when the thickest part of the breast reads 165°F on a meat thermometer.
- Rest: Let the turkey rest for 20 minutes before carving.
