Thai Basil Soup

  • 1 coconut meat and water
  • 1 carrot 
  • 1 cup of cashews
  • juice of lime or lemon 
  • 1 garlic clove
  • 1 inch piece of fresh ginger
  • hand full of cilantro or basil 
  • 1/2 of a bell pepper
  • dash of cayenne pepper, chili peppers
  • 1 tbs honey
  • 1 tbs coconut amino’s 
  • 1/2 cup of onion
  • 1/2 tbs curry powder
  • dash of cumin
  • dash turmeric

     Toppings

  • 1/2 of avocado
  • 1 diced green onion
  • 2 fresh basil leafs 
  • 1/4 cup chopped red onion

GREEN SOUP

  • 5 kale leafs
  • 2 stalks of celery
  • 1 cup of coconut meat
  • 1 cup of water 
  • Half a lemons juice 
  • 2 tbs olive oil
  • 1 clove of garlic
  • 1 tbs of dried Thyme 
  • 1 tbs of dried rosemary 
  • Hand full of dill 
  • Inch slice of jalapeño
  • 1 tsp of sea salt 

 

  • Add avocado black pepper and kelp to top

Creamy Tomato 

  • 1 cup cashews 
  • 3 tomatos
  • 1 carrot
  • 1 stalk of celery 
  • 1 clove of garlic
  • 1/2 cup of spring water
  • 1 tbs apple cider vinegar 
  • dash of paprika 
  • dash of cumin
  • dash of sea salt

     Toppings

  • dulse
  • hand full of chopped cilantro
  • 2 tbs hemp seeds
  • dash of cayenne 

pumpkin curry

  • 2 cup of pumpkin core (cut into small chunks)
  • 1 cup of water
  • 1/2 cup soaked cashews
  • 1 tbs curry powder
  • 1 tsp of turmeric
  • 1 tsp of cumin
  • 1 clove of garlic
  • 1 tsp of thyme
  • 1 tsp of rosemary 
  • 1 tsp of sea salt
  • pinch of fresh dill

french onion

  • 2 cups of almond milk (see nut milk section for recipe)
  • 1 cup of carmelized onions
  • 1tbs miso (chickpea-soy free)
  • 1/2 a lemon juiced
  • 1/4 cup of coconut aminos 
  • 1/2 tbs dried thyme
  • 1/2 tbs cracked black pepper
  • 2 tbs olive oil

  • 2 tomatoes
  • 2 red bell peppers (with seeds and stems)
  • 2 stalks of celery (diced)
  • 1 cup of water
  • 1/4 cup sun dried tomatoes
  • hand full of fresh cilantro 
  • 1 tbs of lime or (juice of 1 full lime) 
  • 2 tbs olive oil
  • 1 tbs sea salt
  • 1 tbs or chili powder 
  • 3/4 tbs cumin
  • 1 tbs paprika

Warm pho   

    Broth

  • simmer for 1hour on the LOWEST HEAT possible
  • 10 cups of spring water
  • 2-4 stocks of celery
  • 2 carrots 
  • 3 bay leafs 
  • 1 large shallot 
  • 1 diced onion
  • 8-10 cloves of garlic
  • 1 inch piece of ginger
  • 8 shiitake mushrooms 
  • 1 tbs of sea salt
  • 1 spoon full of honey
  • 1 tbs of apple cider vinegar 
  • 1 tbs of black pepper
  • 1 -1/2 tbs of star anise 
  • 1/2 tbs of cinnamon 
  • 5-6 stems and leafs fresh basil 
  • 5-6 stems and leafs fresh cilantro 

     Pho Toppings

  • 8-10 diced shiitake mushrooms
  • 2 cups of bean sprouts (noodles)
  • 2 cups of water cress
  • 1/2 cup of diced green onion
  • 1/4 cup of diced cilantro 
  • 1 cup of fresh basil 
  • slices of peppers
  • 1 sliced lime
